The next time you make that recipe, or any jambalaya or red beans and rice recipe, here is a fun way to use up some leftovers – or simply a different way of serving it: stuff it in a bell pepper.
It’s super easy and tastes amazing! And top it with feta cheese. I don’t have any photos with the stuffed bell pepper topped with cheese, but it adds an extra depth of flavor – especially with feta cheese. Not to sound like that old Frank’s Red Hot commercial, but lately I’ve been putting that sh!t on everything. Let me know what you think about it in the comments below.
All you need to do is after cooking the jambalaya or red beans and rice, is add enough water to just cover the bottom of a baking pan, place the bell peppers stuffed with the jambalaya on it and bake at 350 for 25-30 minutes.
Let the stuffed bell peppers sit for 10 minutes before serving. Enjoy!
